We had so much fun making these cute little chocolate egg nests made from crispy rice treats, green coconut, and fair trade speckled chocolate eggs! They’re the perfect dessert for easter or any spring festivity. They’re easy to make with no baking and they look so impressive! Check out our how-to video above to see how easy it really was.
- 5 cups crispy rice cereal
- 1/2 stick butter (4 tablespoons)
- 1 bag marshmallows (about 40)
- 2 cups shredded coconut
- green fruit juice (we used Odwalla Organic Groovin’ Greens)
- green food coloring
- 1 package Divine Chocolate Speckled Eggs
Mix 2 cups of coconut with a few teaspoons of green juice (totally optional but adds a nice fruity flavor!) Mix in a drop or two of green food coloring. Set aside.
Melt butter and marshmallows in a large microwave-safe bowl on high for 1 minute, stir, cook for another minute, and stir again. Add in the crispy rice cereal and mix until all pieces are coated. While the marshmallow mixture is still warm, form a palm-size amount into a greased muffin tin. Push the sides up to the edge to create a nest for the eggs. Allow to cool and decorate with the green coconut “grass” and fair trade Divine Chocolate Speckled Eggs. Kids can join in to help make this cute snack! This recipe should yield about 18 standard size muffin egg nests.
