This weekend is the annual Chocolate Lovers Festival in Old Town Fairfax. If you don’t love chocolate, this is definitely not the place for you. There’s chocolate in every shape, flavor and form all packed into one room full of chocolate-happy taste testers. We always feel distinguished at this event since we only offer Fair Trade chocolate, but this year we’ve created Mini Chocolate Chip Pies made from Organic, Fair Trade Semi-Sweet Chocolate Chips sold by SERRV in the US.
Chocolate Chip Pie Recipe
Ingredients
2 eggs
1/2 cup white sugar (available at most grocery stores)
1/2 cup all-purpose flour
1/2 cup packed fair trade brown sugar (available at most grocery stores)
1 cup butter, melted and cooled
1 cup organic fair trade semisweet chocolate chips (available at serrv.com)
3 packs of graham cracker mini pie crusts (6-per pack)
Directions
- Preheat oven to 325 degrees F.
- In a large bowl, beat the eggs until foamy. Add the flour, white sugar and brown sugar; beat until well blended. Blend in the melted butter. Stir in the chocolate chips. Pour batter into unbaked pie shells, dividing evenly; makes about 18 mini pies.
- Bake at 325 degrees F for 1/2 hour, and golden brown on top. Serve warm with whipped cream or ice cream, if desired.
