We can never get enough watermelon around here (breakfast, lunch, dinner, snack, repeat!) It’s easy for little hands to hold and little teeth to chew — and adults love it too, of course. Our summer is happier and juicier because of it. Thankfully, we have spotted fair trade watermelons in lots of places at a great price — look for them at Costco and in your local supermarket.
Instead of slicing it up and eating it the way we usually do, we were inspired by The Pioneer Woman to enjoy watermelon as part of our main meal. Replace tomato with fair trade watermelon in Pico de Gallo for a refreshing, twist on a classic. Each bite is sweet and tangy. We added black beans for a complete summer salad on top of tortilla chips. This recipe is very forgiving; use more jalapeño or leave it out, lemon instead of lime — you can’t mess it up as long as you don’t leave out the watermelon! So refreshing on a hot day.
Ingredients:
1/2 of a large seedless watermelon, peeled and diced (or one small)
1/2 whole red onion, diced
3 bell peppers, any color, seeded & diced
2 jalapeños, seeded & diced fine
1 bunch cilantro, chopped
juice of 1-2 limes
1/2 tsp salt
Toss all of the ingredients together in a large bowl. Taste and adjust salt & lime as needed.
