Blending spices is part art, part craft, part luck and part magic. The main theme in a blend is fairly obvious, but the real test is the choice of subtle bits that add nuance…those accents that will add little pops of salt, or sweet or acid or herb.

Ukuva iAfrica works with Turqle Trading to produce Fair Trade spices and sauces of exceptional quality. The tassle and beadwork is made by those with metal disabilities at Cape Mental Health Society. Each spice was developed over the course of a decade by a culinary-minded traveler who recorded his experiences with food in Africa. Today, the spices are grown and packaged in South Africa, with a proceed going to the Fair Trade Trust for the education of the workers.

As pepper ages, some of the essential oils - the volatiles that give pepper its energizing properties - evaporates.
In pepper that lives alone, the evaporated essential oils are lost, but pepper that lives with salt has an advantage: the salt absorbs those oils and soon, the salt starts tasting peppery and when the two are ground together, they create a glorious salt and pepper flavor experience.

In West Africa they make an onion Yassa sauce. There are as many recipes for Yassa Onion Sauce as there are cooks in West Africa. Also great on fish and lamb. Excellent on roast root vegetables, butternut or pumpkin - or in a brown and wild rice dish with lentils, cashews and onions.
Here's a recipe for Onion Yassa Sauce:Roughly chop 3 brown onions and 5 cloves of garlic. Place in a roasting pan with 100ml peanut oil. Squeeze the juice of half a lemon over the vegetables and grind 2 tsp Yassa over the top. Roast until the onions are very soft - (take care not to burn the garlic!) A fascinating blend that adds 'salty' taste without actually adding salt. Kariba Sunset is excellent with grilled, fried, slow-cooked or pot roasted beef, and on tomato-based salads with Italian cheese, basil and pine nuts.
